A return to the roots is becoming the main trend of modern cooking. In the era of globalization, when the boundaries between tastes are blurring, Russian chefs are increasingly turning to regional traditions — not to preserve the past, but to create the future. The Russian Fusion project, which will be held as part of the WorldFood Moscow exhibition on the WorldFood Connect platform, proves that the authentic taste of Russia is born at the intersection of ancient recipes and modern techniques.

 

From Kaliningrad to Kamchatka: a dialogue of cultures on one plate


Russian Fusion is not just a competition. This is a challenge that the organizers and presenters threw down to eight talented chefs from different parts of the country. Each participant represents his small homeland - Murmansk, Dagestan, the Far East and other regions. But the task of the project goes beyond the usual presentation of local cuisine.

 

The essence of the mechanics is in the draw. The chef does not just cook a dish of his native land, but combines the best traditions of his region with the cuisine of another, often unfamiliar corner of Russia. This is how unexpected duets are born: Murmansk cod and Dagestan spices, Kamchatka crab and Bashkir honey, Kaliningrad sprats and Nizhny Novgorod pickles. In the final, the two best participants will receive a grandiose task - to combine all eight regions in one dish, creating a real gastronomic code of the country.

 

Russian Fusion Finals on September 17 at WorldFood Moscow


The final of the Russian Fusion will be held on September 17 at WorldFood Moscow. The jury will be coryphaeus of the gastronomic world - Stanislav Pesotsky and Anatoly Derenchuk.
