


According to BusinesStat, the turnover of the catering market in Russia at the end of 2025 amounted to 4.29 trillion rubles, which is 21% higher than the level of 2024. Since 2021, the market turnover has increased by 2.2 times. According to Rosstat, the total revenue of Russian catering enterprises in 2025 reached 2.66 trillion rubles, which is 14.1% more than a year earlier.
The growth of the market in monetary terms was associated, among other things, with an increase in the average check against the background of rising prices for ingredients, rent and wages. At the same time, consumer demand itself was increasingly shifting towards more affordable and faster formats.
According to INFOLine, the total number of catering establishments in 2025 increased by 8% and exceeded 240 thousand. Comparable dynamics were shown by coffee shops and Grab & Go outlets - their number increased by 8.4%, to more than 59 thousand outlets. The number of bars increased by 7%, to about 20 thousand establishments, and full-service restaurants showed a more restrained growth - about 6.5%, to 68 thousand.
In the segment of chain establishments, the leaders were bakeries, which accounted for 30% of all launches, Grab & Go coffee shops with a share of 13% of the total growth, and Street Food, which provided 11% of new openings.
The beginning of 2026 confirmed that the market is still operating in conditions of subdued demand. According to the Chek Index service of the fiscal data operator Platform OFD, in the period from January 1 to March 23, 2026, the number of checks in restaurants and bars in Russia decreased by 3% year-on-year. In Moscow, the decrease was 12%, in St. Petersburg - 8%.
According to market participants, in the first months of 2026, traffic for many restaurant chains decreased by 10-15%, and for some players - by 30-40% compared to the same period last year. Among the main reasons, experts call the fall in real incomes of the population, rising prices and more cautious consumer behavior. An additional factor remains the increasing competition from retail: some customers switch from visiting restaurants to buying ready-made food in retail chains and through delivery services.
In 2025–2026, several stable trends remain in the catering market. First of all, this is automation and self-service: order kiosks, digital collection and payment systems help speed up service, reduce queues and reduce the burden on staff.
The second trend is the use of artificial intelligence in the daily work of establishments: from updating the menu and preparing descriptions of dishes to working with reviews and marketing content.
Local cuisine does not lose its importance: regional products, national dishes and gastronomic identity help establishments to form a more noticeable market positioning, create a unique offer and work more accurately with the expectations of the audience.
Another long-term trend is the increasing role of delivery as a full-fledged sales channel. According to Data Insight, the share of establishments with delivery has grown to 64% in the country and to 72% in cities with a population of over one million. On average, about 26% of orders in catering outlets are for delivery. According to industry estimates, the volume of the ready-to-eat food delivery market from restaurants reached 788.3 billion rubles, which is 21.9% more than in 2024.
Experience marketing is also playing an increasingly important role: establishments strive not only to cover the basic need for food, but also to form the emotional value of a visit through service, special formats, collaborations and additional scenarios for interacting with guests.
